Dried Chilies Hot Sauce
Dried Chilies Hot Sauce Recipe:
- 4 Dried Ancho Chilies
- 4 Dried Guajillo Chilies
- 4 Dried Pasilla Chillies
- 4 Fresh Habanero Chilies
- 2 lbs Fresh Fresno Chilies
- 1 White Onion
- 3 Cloves Garlic
- 3/4 Cup White Vinegar
- 2 Cups Water
- 2 Tbsp Baja Gold Sea Salt
Place all the fresh chiles in a large bowl and add 2 tbsp of baking soda. Add warm water to cover. Wash the fresh chiles by hand until they are free from dirt and grime. Dump the wash water and rinse the chiles under warm water until thoroughly cleaned.
Cut the ends off of the dried chilies, shake, and scrape out all the seeds.
Bring 4 cups of purified water to a boil, turn off the heat, and add dry chilies. Steep chilies until soft, about 30 minutes.
Cut the ends off of the fresh chiles, discard them, and place the chilies in a blender.
Add the water, vinegar, salt, onion, and garlic.
Blend this mixture until completely liquified.
Add the softened dried chilies and blend until liquified.
Taste. If desired, add salt, vinegar, or water until you are satisfied with the taste.
Heat further on the stove top if your blender does not have a soup option.
Let cool and bottle.
